Our Baking Team
Working throughout the night to ensure Dublin and the wider area have fresh bread daily, our skilled team of bakers and pastry chefs are hard at it whilst most of us are all still tucked up in bed, dreaming of lovely loaves, buttery pastries and hot scones fresh out of the oven.
Our Delivery Team
Our crack team of packers and delivery drivers hit the road in our fleet of Bretzel vans before dawn every morning, delivering fresh bread and baked good to over 200 outlets in Dublin and beyond.
Our Café Team
Our café team are always happy, smiling and willing to share their expert knowledge on all things bread related. They are pleased to make you feel at home, whilst you enjoy a freshly ground coffee or a choice of teas with a delicious sandwich.
William Despard - Managing Director
Owner of the Bretzel for the last 20 years, William is a passionate bread enthusiast who is committed to developing new Real Bread products while ensuring that traditional Bretzel favourites are delivered with consistent quality to new and existing clients.
Dymphna O'Brien - General Manager
Dymphna brings her extensive experience of management in a medium sized bakery to The Bretzel. A key recent achievement is getting BRC certification for the production of bread and confectionery. Dymphna oversees the corporate and operational aspects of The Bretzel.
Barbara Stone - Office Manager
One of the longest serving members of The Bretzel team, Barbara oversees the day to day operations of the Lennox Street office. Barbara has responsibility for product information.
Patrycja Pochodaj - Finance Adminstrator
Patrycja divides her time between financial administration and customer service. Responsible for all invoicing and payments, she recently rolled out a new online ordering system which streamlines customer ordering.
Wieslaw Drabik - Operations Manager
Wieslaw has responsibility for the smooth running of systems in all aspects of production. He oversees logistics and maintenance.
