Relying on traditional skills and methods, The Bretzel Bakery has long been synonymous with excellence, its secret residing in the quality of ingredients used and the passion of its bakers who hand make all of our delicious, mouth-watering breads daily.

Our Baking Team

Working throughout the night to ensure Dublin and the wider area have fresh bread daily, our skilled team of bakers and pastry chefs are hard at it whilst most of us are all still tucked up in bed, dreaming of lovely loaves, buttery pastries and hot scones fresh out of the oven.

Our Delivery Team

Our crack team of packers and delivery drivers hit the road in our fleet of Bretzel vans at 5am every morning, delivering fresh bread and baked good to over 120 outlets in Dublin and beyond.

Our Café Team

Our café team are always happy, smiling and willing to share their expert knowledge on all things bread related. They are pleased to make you feel at home, whilst you enjoy a freshly ground coffee or a choice of teas with a delicious sandwich.  

William Despard - Managing Director

Owner of the Bretzel for the last 15 years, William is a passionate bread enthusiast who is committed to developing new Real Bread products while ensuring that traditional Bretzel favourites are delivered with consistent quality to new and existing clients.

Dymphna O'Brien - Operations/Finance Manager

Dymphna brings her extensive experience of management in a medium sized bakery to The Bretzel. A key recent achievements is getting Bretzel certified for the Q mark and then nominated for a Q award: the only Artisan Bakery ever nominated; another is getting the Bretzel fully HACCP compliant. Dymphna oversees the corporate and operational aspects of The Bretzel.

Barbara Stone - Office Manager

One of the longest serving members of The Bretzel team, Barbara oversees the day to day operations of the office. A key recent achievement is the implementation of our new cloud based online ordering system. Barbara also coordinates the Bretzel education programme from internships to transition year visits.

Patrycja Pochodaj - Admin

Patrycja divides her time between the shop and the office, providing an important link between the two. Patrycja handles POs, invoicing, customer orders and queries with maximum efficiency.

Wieslaw Drabik - Logistics Manager

Wieslaw ensures the reliable and timely delivery of your bread, pastries and cakes. He is responsible for bakery maintenance and our fleet of vans while also considering the environment both within and outside the bakery.
